Lemon Ricotta Pancakes, just in time for Mother’s Day brunch

Ahh the smell of burnt toast and bacon, it must be Mother’s Day Sunday morning. As families surprise the moms in their lives with breakfast we know mothers are in bed waiting. Hopeful for something a little less… burnt. 

We sat down with Caitlin Boudreau, mom of two and Lead Dietitian at TELUS Health MyCare to give us a Mother's Day brunch that is satisfying, filling, and most importantly yummy. This recipe is full of protein-rich foods such as eggs and ricotta which will keep you fuller for longer. Remember, you don't have to wait for a special occasion like Mother's Day to delight someone you love with breakfast in bed. Showing kindness and thoughtfulness to your loved ones without a specific reason is always recommended. 🥞

Lemon Ricotta Pancakes

(serves 5-6)

  • Ingredients:
  • Dry:
  • 2 cups all purpose flour (can substitute for gluten free flour) 
  • 3 tbsp sugar
  • 1.5 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp lemon zest
  • Wet:
  • 2 large eggs (at room temperature if possible), lightly beaten
  • 1.5 cups milk
  • 1 cup full-fat ricotta cheese
  • 1.5 tsp vanilla extract
  • 1/2 cup lemon juice, freshly squeezed

Instructions:

  • In a large bowl, add and combine dry ingredients. In a separate bowl, whisk wet ingredients.
  • Gently fold wet mixture into dry ingredients and mix until just combined. Do not overmix.
  • Ladle batter by 1/3 cupfuls onto a medium-hot, greased pan. Be sure to give plenty of space for the pancakes so they aren't touching. Cook for a couple of minutes per side. You know it's time to flip them when you see small bubbles forming on the top.
  • Serve with maple syrup, whipped cream or just plain sliced fruit.
